An important tip when making crème caramel is to place it in a preheated oven, not a cold one, so that the baking begins at a stable, even temperature.
Crème caramel shouldn't look completely firm when it leaves the oven. This is one of the reasons it sometimes ends up overbaked.
If you wait for the center to become completely still, the egg structure may already be overcooked.
A perfectly baked custard is set around the edges, but still has a slight, uniform jiggle in the center when you gently shake the mold.
After removing it from the oven, the residual heat continues to cook the custard, and the cooling process stabilizes the structure further.
Tip: Give the mold a very gentle shake before taking the custard out of the oven. If the edges are set and the center jiggles slightly like jelly, it is ready. Do not wait for the middle to become completely firm—residual heat will carry over the cooking after it is out of the oven, and the custard will set completely as it chills.
Few desserts have such a dramatic finale. Up to this point, almost everything interesting has been hidden inside the mold.
After carefully running a knife around the edges to release the custard, a plate is placed over the mold. Then comes a confident flip. For a second, nothing happens.
Then, the custard releases, and the caramel syrup cascades down its sides, pooling beautifully on the plate.
This is the moment of truth that reveals whether the texture is delicate yet stable, whether the caramel has dissolved properly, and whether the dessert will hold its shape.
It is no coincidence that the French call it crème renversée. Inverting it is not just a way of serving; it is part of the dessert's very identity.
